Pumpkin Spice Mule

What happens when you meld classic fall flavors, like cinnamon, nutmeg, pumpkin and cloves, with refreshing ginger beer and a splash of vodka? You get a cocktail you can enjoy in any weather — and at the drop of a hat (prep is only five minutes!).

Cook time: 2 minutes plus cooling time

Ingredients

To make the pumpkin spice simple syrup:
1 cup water
1 cup packed brown sugar
¼ cup granulated sugar
¼ cup pumpkin purée
⅛ teaspoon L&B Organic Ground Cinnamon
⅛ teaspoon L&B Ground Nutmeg
Ground cloves
Kosher salt
2 teaspoons vanilla extract

To make the mule:
2 ounces vodka
1 ounce pumpkin spice simple syrup
¼ ounce freshly squeezed lime juice
Ice
3 ounces chilled ginger beer
Lime wedge, for garnish

Directions

  1. To make the syrup: In a small saucepan, combine the water, sugars, pumpkin purée, cinnamon, nutmeg, a small pinch of ground cloves and a pinch of kosher salt. Bring to a boil over high heat, reduce to a simmer and cook for 2 minutes, stirring to dissolve the sugar.
  2. Add the vanilla extract and stir to combine. Remove the pot from the heat and let cool for 10 minutes. Strain the syrup into a Mason jar, seal and refrigerate until cool, 1 hour. The syrup can be stored in the refrigerator for up to 1 week.
  3. To make one mule: In a cocktail shaker, combine the vodka, pumpkin spice simple syrup and lime juice. Fill the shaker halfway with ice and shake vigorously until frosty, about 10 seconds.
  4. Fill a lowball glass halfway with ice. Strain the drink over the ice, top with ginger beer and garnish with a lime wedge.
