Black Fatsu Pumpkins

Black Fatsu is an heirloom Japanese pumpkin known for its attractive, deeply ribbed, bumpy skin. Our Black Fatsu Pumpkins are grown by our friends at Harmony Valley Farms in Viroqua, Wisconsin. 

The skin is dark green – almost black – when young, and transforms into a warm, pale orange-brown as it matures. Often the surface may be covered in a blue-grey bloom, which adds to its unique look. In fact, many people like to use the Black Fatsu for autumnal décor. But we recommend giving them a taste, too! 

Much like a Delicata squash, the skin on the Black Fatsu is edible. When you cut into a Black Fatsu you’ll see a crisp, bright orange interior. When raw, the flesh is sweet with a slightly nutty flavor, and when cooked, the flavor deepens into a taste similar to roasted chestnuts with a smooth, creamy texture. 

Whether you like sweet or savory, there are many ways to enjoy a Black Fatsu! Try them battered and fried into tempura, lightly stir-fried with winter veggies, tossed into soups and stews, sliced into wedges and roasted or stuffed with grains, meats and cheeses. Plus, the sweet, nutty flavor of Black Fatsu blends well in pies and baked goods. 

Our culinary team recommends pairing a Black Fatsu with herbs such as rosemary, sage and parsley and spices such as turmeric, paprika, cayenne and cinnamon. It works well with honey, ginger, greens like kale or radicchio, and raisins, dried cranberries and pecorino cheese. Happy cooking!
