40 Tostitos® Scoops
1 24-ounce package L&B Signature Mashed Potatoes
1 ½ cups finely shredded cheddar cheese, plus more for garnish
1 bunch L&B fresh chives, thinly sliced, divided
½ cup sour cream
Directions
- Heat the oven to 375 F. Line a sheet pan with parchment paper, and place the Tostitos on the pan.
- In a medium bowl, fold together the mashed potatoes, cheddar cheese, and half of the chives until well combined.
- Using a 1 ½ ounce-scoop or heaping tablespoon measure, fill each chip with the mashed potato mixture. Garnish each scoop with a small pinch cheddar cheese.
- Bake for 10 to 15 minutes or until the cheese is melted and the mashed potatoes are warmed through.
- Drizzle the scoops with the sour cream and garnish with the remaining chives. Enjoy!
