Shrimp Tostadas

- 1 medium red onion, diced
- 1 cup cherry tomatoes, halved
- 1 large poblano pepper, small diced
- 1 cup pinto beans
- 1 cup cooked shrimp, cut into bite-sized pieces
- 1 large avocado
- 1/2 cup chopped cilantro
- 4 small corn tortillas
- juice of 1-2 limes
- salt, to taste
- cilantro, for serving
- lime wedges, for serving
- hot sauce, for serving
These fresh and vibrant tostadas come together in just 15 minutes for the perfect simple lunch.

Heat oven to 400 degrees. Place the tortillas on a large baking sheet and bake for about five minutes until golden brown.

In a large bowl, combine the remaining ingredients. Season to taste with salt.

Top each tortilla with mashed avocado and the shrimp mixture. Top with cilantro, lime wedges and hot sauce.
