Pumpkin Cream Cheese Muffins

A festive fall take on the Pumpkin Cream Cheese Muffins from the popular coffee chain

Ingredients

Muffins

  • 2 cups flour
  • 2 eggs
  • 1 pinch salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup canola oil
  • 1/2 cup milk
  • 1 tbsp pumpkin pie spice
  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 1 cup canned pumpkin puree
  • 1 cup cream cheese softened
  • 1/4 cup maple syrup
  • chopped pumpkin seeds for garnish

Instructions

  1. Heat oven to 350 degrees. Add cupcake liners to a muffin pan; set aside. 

  2. In a large bowl, whisk together the flour, salt, baking powder and baking soda.  In a separate bowl, whisk together the eggs, canola oil, milk, brown sugar, maple syrup and pumpkin puree. Pour the wet ingredients into the dry ingredients and mix to form a thick batter.

  3. Mix together the cream cheese and maple syrup. 

  4. Pour the muffin batter into prepared muffin tin. Using either a piping bag or two spoons, add a generous dollop of the cream cheese mixture to the each of each muffin and sprinkle with chopped pumpkin seeds.

  5. Bake for 25-30 minutes.
