Heat oven to 350 F.
On a large cutting board, slice the French bread into 3 6-inch loaves, and slice each loaf in half lengthwise.
Spread ¼ cup of yellow mustard on the insides of each loaf.
Layer 2 pickles, 3 ham slices, 2 slices Swiss cheese and 1 cup pulled pork onto each sandwich.
Heat 2 large cast-iron skillets over low heat for 3 minutes. Place the sandwiches in one skillet and use the bottom of the second skillet to gently flatten the sandwiches. They should be about 2 ½ inches thick.
Transfer the stacked skillets to the oven and bake for 10 minutes or until the bread is toasted and the cheese is melted.
Transfer the sandwiches to a cutting board, slice them in half diagonally and enjoy hot.
