Leftover Thanksgiving Turkey Chili

A fun, creative way to use up your Thanksgiving turkey leftovers.

Ingredients

  • 2 cups shredded turkey
  • 2 Tablespoons olive oil
  • 2 jalapenos diced
  • 3 cloves garlic minced
  • 1 can pinto beans
  • 1 can black beans
  • 1 can navy beans
  • 1 can dark red kidney beans
  • 3 Tablespoons tomato paste
  • 1 28 oz. can crushed tomatoes
  • 3 cups broth of choice
  • 3 Tablespoons oregano
  • 3 Tablespoons dried coriander
  • 3 Tablespoons dried cumin
  • 1/4 cup L&B White Truffle Hot Sauce
  • sour cream (optional)
  • shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large pot and add the shredded turkey, garlic and jalapenos. Sauté until fragrant. 

  2. To the pot, add the beans, tomato paste, crushed tomatoes, broth, spices and hot sauce. Stir to combine. Let simmer for about one hour, stirring periodically. 

  3. Serve with sour cream, cheese or your favorite chili toppings.
