1cupchopped onion
1tspMinced Garlic
1tbspolive oil
3cupsturkeycooked, and cubed
48ozChicken Broth
2cupscooked wild rice
1(19 ounce) cancannellini beansdrained
1(9 ounce) packagefrozen shoepeg white corn
8ozdiced green chilesundrained
1tspground cumin
3tbspchopped fresh cilantro
1/8tspTabasco
1(8 ounce) packageMexican blend shredded cheese
Instructions
In large Dutch oven, sauté onion and garlic in oil until onion is tender. Stir in turkey, wild rice, chicken broth, beans, corn, green chilies and cumin.
Simmer, covered, over medium heat for 30 minutes. Stir in cilantro and Tabasco. Ladle into bowls; sprinkle with cheese.
