Eggs Benedict Strata

A do-ahead dish for a stylish brunch, serve this strata with fresh fruit and mimosas for a special occasion.

Ingredients

  • vegetable cooking spray
  • 8 English muffins split and cut into 1-inch pieces
  • 1 cup diced Canadian bacon
  • 1 (10-ounce) package frozen asparagus cuts thawed and drained
  • 6 Eggs slightly beaten
  • 3 1/2 cups Milk
  • 1 tsp Dijon mustard
  • 1/2 tsp Kosher Salt
  • 1 package hollandaise sauce mix

Instructions

  1. Spray 8x12-inch pan with vegetable cooking spray. Cover pan with half of English muffin cubes. Layer Canadian bacon and asparagus cuts over cubes; top with remaining English muffin cubes.
  2. Combine eggs, milk, Dijon mustard and salt; pour over strata. Refrigerate, covered, several hours or overnight.
  3. Bake, uncovered in a preheated 350 F oven 55 to 60 minutes, or until strata tests done when knife inserted in center comes out clean. Let stand 10 minutes.
  4. Meanwhile, prepare hollandaise sauce according to package directions.
  5. To serve: Cut strata into squares. Pour hollandaise sauce over individual servings.
