Ingredients
FOR THE REDUCED PEAR JUICE: 1 ½ cups pear juice
FOR THE CLOVE SIMPLE SYRUP AND SAGE SUGAR: ½ cup water
¾ cup granulated sugar, divided
1 tablespoon whole cloves
Leaves from 1 sprig of sage
TO ASSEMBLE THE MOCKTAIL: 1 lemon wedge
1 ½ ounces freshly squeezed lemon juice
Ice Cubes
2 ounces Wilderton Earthen NA Spirit
As Prepared - Sage sugar, for garnishing rim of glasses
As Prepared - 2 ounces reduced pear juice
As Prepared - ½ ounce clove simple syrup
Directions

1. Reduce the pear juice: Place the pear juice in a small pot and bring to a simmer over medium-high heat. Cook until the pear juice is reduced to 1 cup, about 10 minutes. Transfer to a small jar, cover, and let cool in the refrigerator.

2. Make a simple syrup: In a small pot, combine ½ cup of the sugar, water, cloves, and sage leaves. Bring to a simmer and cook for 15 minutes. Strain the simple syrup into a resealable jar and let cool in the refrigerator. Reserve the sage leaves. 

3. Make sage sugar: Heat the oven to 200 F. Line a sheet pan with parchment paper, lay the reserved sage leaves on the parchment, and bake for 30 minutes or until crisp. Let cool for 15 minutes. 

4. In a mortar and pestle, grind the sage leaves with the remaining ¼ cup sugar. Transfer to a small plate, and set aside. 

5. Assemble the Mocktail:  run the lemon wedge around the rim of a small cocktail glass and dip the glass in the sage sugar to coat the rim. Fill with ice.

6. In a shaker filled halfway with ice, combine the reduced pear juice, Wilderton Earthen, simple syrup, and lemon juice. Shake vigorously until chilled, 30 seconds. Pour into the prepared cocktail glass and enjoy!
