Cajun Salmon with Mango Salsa

Cajun Salmon with Mango Salsa

Ingredients
1 ripe mango, peeled and diced
¼ cup diced red bell pepper
¼ cup diced red onion
2 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon Lunds & Byerlys Cajun Seasoning
Salt to taste
4 (6-8 ounce) salmon fillets, skin removed
1 tablespoon olive oil
Directions
- In a medium bowl, stir together mango, red bell pepper, onion, cilantro, lime juice, 1 teaspoon Cajun seasoning, and salt.
- Cover and refrigerate the mixture for 2 to 4 hours.
- Bring the mango salsa to room temperature before serving.
- Prepare the grill. Spray the grill rack with non-stick cooking spray.
- Rinse the salmon; pat dry with paper towels.
- Brush both sides of salmon with olive oil.
- Rub Cajun seasoning and salt onto both sides of salmon.
- Grill salmon over medium-high heat for 5 minutes.
- Turn the salmon and grill just until the fish flakes with a fork (4-5 minutes).
- Place salmon fillets on a serving platter.
- Spoon mango salsa over the fish. Serve immediately.
