Slow Cooker Chicken Fajitas
Tired of plain old Taco Tuesday? These easy chicken fajitas are perfect for even the busiest weeknights. They cook all day in the slow cooker and are ready to go by dinnertime!
Start by pouring half a can of diced tomatoes with chilies into your slow cooker.
Next, add 1 sliced onion, 1 sliced red pepper, 1 sliced yellow pepper and 1 sliced green pepper. Add the other half of the diced tomatoes on top of the peppers.
Generously sprinkle Lunds & Byerlys Ole’ Chile Cilantro Seasoning onto 2 pounds of boneless, skinless chicken breasts and lay the chicken on top of the vegetables in the slow cooker.
Cook on high for 3-4 hours or on low for 6-8 hours. Shred the chicken and serve with tortillas and your favorite fajita toppings.
