
Dragon Fruit Margarita Mocktail
It’s no secret how dragon fruit gets its name. One look at its scaly skin and you’re humming Puff the Magic Dragon. But its wild, prehistoric appearance belies a sweet flavor that’s been described as a cross between a pear and a kiwi. If you haven’t had one before, you’re in for a treat. Try it in this mocktail recipe - It’s a light, sweet drink with vanilla extract for a bit of warmth and orange and lime zest for a tropical twist.

Dragon Fruit Margarita Mocktail

2 red or yellow dragon fruit
¼ cup hazelnuts
1 ounce blue agave nectar
¼ ounce pure vanilla extract
1 navel orange
1 Key lime
Coarse Sea Salt (optional)
Directions
- Peel the dragon fruit and scoop the flesh into a blender. Add the hazelnuts, blue agave nectar and vanilla extract.
- Zest half the navel orange and half the Key lime, leaving as much pith on the fruit as possible. Reserve the zest.
- Cut the navel orange and Key lime in half, and squeeze their juices over a mesh strainer into the blender.
- Blend until smooth.
- Chill the mixture in the refrigerator for an hour.
- Rim four margarita glasses with coarse sea salt. Pour the dragon fruit mixture into the glasses, then sprinkle the orange zest and Key lime zest over the top of each glass. Serve, and enjoy!
