1. Start by heating 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add sliced onions and peppers and cook for 5-7 minutes until the vegetables are softened. Remove the veggies from the skillet.
2. Lower the heat to medium; add a tortilla to the pan and top it with your favorite shredded cheese, shredded rotisserie chicken and the veggies. Top with an additional tortilla.
3. Cook until the bottom tortilla starts to get brown and crispy. Flip and cook until the bottom tortilla is golden brown and the cheese is melted inside.
4. Slice and serve with sour cream, guacamole and salsa.
