Leftover Salmon Hack

Ingredients

  • 1 filet leftover cooked salmon
  • 1 cup leftover prepared rice
  • 1 tablespoon mayonnaise
  • 1 teaspoon Sriracha
  • 1 teaspoon soy sauce
  • 1/2 avocado
  • seaweed snacks, sliced scallions and kimchi, to serve

This is the perfect, simple way to use up leftover salmon and rice. Inspired by Emily Mariko's viral recipe.

Directions

  1. Flake the leftover salmon using a fork and place into a bowl with the leftover rice. Add an ice cube directly on top of the rice and salmon and press a piece of parchment paper on top of the mixture. Microwave for about 1 minute and remove the ice cube. The ice cube helps steam the salmon and rice and keep it moist.

  2. Mix the mayonnaise, Sriracha and soy sauce into the salmon and rice until combined. Top with sliced scallions, avocado and kimchi. To eat, wrap up the mixture with a seaweed snack for the perfect bite!
