Homemade Argentinian Empanadas
Ingredients
- Crust
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1/4 to 1/2 cup cold water
- Filling
- 1 pound ground beef
- 1/2 cup sliced green onions
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 cup chopped green olives
- 3 hardboiled eggs, chopped
- 1 onion, sautéed
- salt, to taste
- pepper, to taste
- To Assemble
- 1 egg, beaten
A delicious and creative way to use ground beef.

To make the crust, whisk together flour and salt. Pour in the vegetable oil and water, and incorporate the dough together until it is pliable, but not sticky.

To make the filling, combine all the ingredients in a medium bowl and set aside.

Roll the dough out on a floured surface and cut out circles of dough in your desired size. Add a spoonful of filling to the center of each dough circle, fold the dough over the filling and use a fork to crimp the edges together.

Glaze empanadas with a beaten egg and place into the oven at 400 F degrees for 25-30 minutes or until golden brown on top.

Enjoy with your favorite dipping sauce, such as chimichurri!
