Chicken Curry

Bring the exotic tastes of India to your dinner table in

  • 1 ½
    tablespoons vegetable oil
  • 2 pounds boneless, skinless chicken breast halves, cut into
    1-inch cubes
  • 1 cup
    chopped onions
  • 2
    (11.5-ounce) cans tomato juice
  • 1
    (10.5-ounce) can chicken broth
  • 3
    tablespoons curry powder
  • 2 teaspoons
    minced garlic
  • ½ teaspoon
    chili powder
  • ½ teaspoon
  • Cooked basmati

  1. In
    a large skillet, heat oil over medium heat.

    chicken and onions until chicken is no longer pink and juices run clear (8-10

    in tomato juice, chicken broth, curry, garlic, chili powder and salt.
  4. Cook,
    uncovered, over medium heat until slightly thickened (about 25 minutes).
  5. Serve
    over rice with toppings of your choice.
