Lori Anne Peach, Mint & Buttermilk Popsicles
Ingredients
- 3 Lori Anne peaches
- 3 tbsps chopped fresh mint
- 2-3 tbsps brown sugar
- 1 teaspoon vanilla extract
- 1 pinch salt
- 3 cups plain Greek yogurt
- 1/4 cup buttermilk
- 2 tbsps honey

In a medium saucepan, combine 2 chopped Lori Anne peaches with the mint brown sugar, vanilla and salt. Bring to a simmer for about 3 minutes until the sugar is dissolved.

In a large bowl, combine Greek yogurt, honey and buttermilk. Add the peach mixture and stir to combine.

Thinly slice the third Lori Anne peach. Lay out the popsicle molds and add about 2 peach slices to the bottom or side of each mold. Fill the molds with the popsicle base. Insert the popsicle sticks.

Freeze for at least 2 hours or overnight.

Unmold and enjoy!
