In a large bowl, combine the ground pork, green onion, minced ginger, soy sauce, sesame oil, minced garlic, shredded cabbage, salt, and pepper.
To assemble the dumplings, place a teaspoon of filling in the center of a dumpling wrapper. Use your finger to spread a small amount of water onto half of the exposed dumpling wrapper.
Fold the dumpling in half and use the thumb of your non-dominant hand to pinch the dough while folding with the forefinger of your dominant hand (it's a learning curve but they will taste good regardless of the shape). Just make sure the dumplings are well sealed.
Add oil to a pan heated on medium-high and once warmed, sear dumplings for a couple minutes to achieve their signature crispy bottom. Then add water and a lid, steaming for about 5 minutes.
Combine ingredients for the sauce and serve with finished dumplings. Garnish with sliced scallions and enjoy!
