Cider Pulled Pork with Cider BBQ Sauce

Ingredients

For the pork

  • 3-4 pound pork shoulder
  • 1 onion sliced
  • 1 cup apple cider
  • 1 teaspoon Cinnamon
  • ½ teaspoon garlic powder
  • 1 teaspoon Salt

For the cider BBQ sauce

  • ½ cup apple cider
  • ½ teaspoon Cinnamon
  • 2 cups your favorite store-bought barbecue sauce

For the coleslaw

  • 14 ounce bag coleslaw mix
  • ½ cup apple cider
  • 2 tablespoons Honey
  • 1 tablespoon Dijon mustard
  • ½ teaspoon Salt

Instructions

  1. Place sliced onions on bottom of slow cooker.
  2. Set pork shoulder on top of onions.
  3. In small bowl, combine cider, cinnamon, garlic powder and salt. Pour over pork.
  4. Cook on low for 8-10 hours, until pork easily shreds.

To make cider BBQ sauce

  1. Combine cider, cinnamon and barbecue sauce in small saucepan over medium heat.
  2. Bring to a simmer and let cook 10-15 minutes, until mixture has reduced to the consistency of barbecue sauce.

To make coleslaw

  1. Combine all coleslaw ingredients and mix well.
  2. Refrigerate until ready to use.
  3. Can be made up to one day in advance.
