Instant Pot Tandoori Chicken

Ingredients

  • 1 ½ pounds chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon curry powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon fresh minced ginger
  • ½ teaspoon salt
  • 1 (14-ounce) can coconut milk
  • Fresh cilantro , for topping

Instructions

  1. Place all ingredients in Instant Pot or pressure cooker.
  2. Secure lid and cook on high pressure for 10 minutes.
  3. Let pressure naturally release for 10 minutes and then release the valve.
  4. Serve on top of rice, in lettuce wraps, or with naan.
