Comté (also called Gruyère de Comté or Comté Fort Saint Antoine) is considered to be one of the finest cheeses in the world. It’s made from unpasteurized cow’s milk, matured to perfection in the silence and darkness of special caves in eastern France, sometimes named after the cellars in which it is ripened (such as Comté Fort Saint Antoine).

This hard, pale yellow cheese is ripened for a minimum of 4 months, but not more than 18 or 24 months, developing a delicate flavor of brown butter and roasted nuts with a sweet finish.
