Turkey & Veggie Roll-Ups

Are our Turkey & Veggie Roll-Ups low-carb, inside-out sandwiches that are crunchy, cheesy and tangy? Yes. Are they no-cook? Yes. Are they healthy? Yes. Can they be eaten for a quick lunch or as an appetizer? Yes and yes.

They pretty much have it all, including creamy Neufchatel cheese, crisp cucumbers and earthy carrots. You can customize them, too. Try throwing in lettuce, zucchini, avocado, tomato — whatever strikes your fancy. Or add a sprinkle of turmeric and L&B Smoked Paprika to kick up the spice.

These roll-ups can be eaten as hearty sandwiches or cut into smaller sections and enjoyed as finger food or appetizers. However you slice them, be prepared for a delicious and satisfying treat!

Serves 4 (2 roll-ups per serving)
Preparation Time: 15 minutes

Ingredients:

8 slices (½ pound) Metro Deli Turkey, thick sliced
8 tablespoons Neufchatel cheese, softened
½ green pepper, julienned
½ red pepper, julienned
½ cup carrots, julienned
½ cucumber, julienned

Directions:

  1. Lay slices of turkey on a cutting board.
  2. Spread 1 tablespoon softened Neufchatel cheese on each slice of turkey.
  3. Layer on peppers, carrots, cucumber and roll it all up in the turkey slice.

Optional: Kick up the flavor with a sprinkle of turmeric, L&B Smoked Paprika or dip the roll-ups in your favorite salsa.
