Sun-Dried Tomato Dip
Serve this easy, tangy dip with baked tortilla chips and crackers or use it as a spread on sandwiches. A delicious way to class up a grilled cheese sandwich! Pairs well with Syrah.
Makes 1 cup (about 8 servings)

¼ cup drained oil-packed sun-dried tomatoes
¼ cup chopped drained roasted red bell peppers
½ cup chopped walnuts, toasted
1 tablespoon chopped shallot
1 ½ tablespoons red wine vinegar
Salt and freshly ground black pepper to taste
⅛ cup olive oil
- Place tomatoes, bell peppers, walnuts, shallot, vinegar, salt, pepper, olive oil and 2 tablespoons of water in a high-speed blender or food processor.
- Purée until all ingredients are incorporated together.
