Shrimp Tostadas

Ingredients

  • 1 medium red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 large poblano pepper, small diced
  • 1 cup pinto beans
  • 1 cup cooked shrimp, cut into bite-sized pieces
  • 1 large avocado
  • 1/2 cup chopped cilantro
  • 4 small corn tortillas
  • juice of 1-2 limes
  • salt, to taste
  • cilantro, for serving
  • lime wedges, for serving
  • hot sauce, for serving

These fresh and vibrant tostadas come together in just 15 minutes for the perfect simple lunch.

Directions

  1. Heat oven to 400 degrees. Place the tortillas on a large baking sheet and bake for about five minutes until golden brown. 

  2. In a large bowl, combine the remaining ingredients. Season to taste with salt. 

  3. Top each tortilla with mashed avocado and the shrimp mixture. Top with cilantro, lime wedges and hot sauce.
