Rotisserie Chicken Remix: Winter Chicken Salad
Pick up a rotisserie chicken from our deli and make this hearty winter salad tonight!
Peel, seed and cube your favorite winter squash (we used butternut) and place on a baking sheet. (Don’t feel like cutting up squash? Look for cubed butternut squash in our produce department!) Drizzle with olive oil and roast in a 400 F oven for 30 minutes.
While the squash is cooking, cook 1 cup of dry quinoa according to package directions and shred the rotisserie chicken.
Add the squash, quinoa and chicken to a large bowl. Mix in kale, pomegranate seeds and crumbled goat cheese. Top with your choice of dressing and serve with a glass of red wine.
