Rotisserie Chicken Remix: Chicken Pesto Zoodles

Spiralized zoodles – noodles made out of zucchini – are the talk of the kitchen right now! If you’ve never tried them before, now is the perfect time. After they’re cooked, they’re surprisingly similar to noodles, but without all the calories and carbs.

To make this tasty dinner, start by shredding a rotisserie chicken from our deli. Mix the shredded chicken with your favorite prepared pesto and set aside. Next, slice a pint of cherry tomatoes in half and set aside, too.

Using a spiralizer, make zucchini noodles from 4 zucchinis. Tip: If you don’t have a spiralizer, you can just use a veggie peeler and make ribbons.

Add one tablespoon olive oil to a large skillet over medium heat. Add zoodles and heat for 4-6 minutes until warm, tossing frequently. Add the pesto chicken mixture and the tomatoes to the pan and heat until warm.
