Cajun Salmon with Mango Salsa

Ingredients

  • 1 ripe mango, peeled and diced
  • ¼ cup diced red bell pepper
  • ¼ cup diced red onion
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Lunds & Byerlys Cajun Seasoning
  • salt to taste
  • 4 (6-8 ounce) salmon fillets, skin removed
  • 1 tablespoon olive oil
  • 2 tablespoons Lunds & Byerlys Cajun Seasoning
  • salt to taste

Directions

  1. In medium bowl, stir together mango, red bell pepper, onion, cilantro, lime juice, 1 teaspoon Cajun seasoning and salt. Cover and refrigerate 2 to 4 hours. Bring to room temperature before serving.
  2. Prepare grill. Spray grill rack with no stick cooking spray. Rinse salmon; pat dry with paper towels. Brush both sides of salmon with olive oil. Rub Cajun seasoning and salt onto both sides of salmon. Grill salmon over medium-high heat 5 minutes. Turn and grill just until fish flakes with a fork (4-5 minutes).
  3. Place salmon fillets on serving platter; spoon mango salsa over fish and serve immediately.
