It’s asparagus season, and that means it’s time for one of our favorite side dishes: Prosciutto-Wrapped Asparagus. This impressive dish comes together quickly with just a handful of ingredients. Delicious served with a glass of your favorite white wine.
Preparation time: 20 minutes
8 thick asparagus spears, ends trimmed, lower half peeled
8 slices prosciutto
8 fresh basil leaves
Parmesan cheese, shaved
Extra virgin olive oil
Freshly ground pepper
- Blanch asparagus in boiling salted water for 3 minutes. Immediately drain and plunge into bowl of ice water. Let sit 10 minutes; remove and dry on paper towels.
- Wrap a basil leaf around each asparagus spear. Wrap prosciutto slice around bottom two-thirds of each asparagus spear. Arrange on serving platter.
- Garnish with Parmesan shavings and fresh ground black pepper. Drizzle with balsamic vinegar and olive oil.
