Mediterranean Tuna Toasty
A creative take on an old favorite, pairing heart-healthy tuna with briny Kalamata olives, peppery arugula and garlicky hummus.
Preparation time: 15 minutes
1 can Wild Planet Albacore Tuna (packed in olive oil)
1 tablespoon minced parsley
2 tablespoons Follow Your Heart Vegenaise
¼ cup thinly sliced red onion
¼ cup pitted and chopped Kalamata olives
½ cup Full Circle cannellini beans (canned), drained and rinsed
¾ cup arugula
1 ½ tablespoons extra virgin olive oil
2 teaspoons fresh squeezed lemon juice
¼ cup garlic hummus
3 (¼-inch) slices L&B Artisan Six Seed Bread, toasted
Cracked pepper, for serving
- Lightly drain tuna; do not press out all excess liquid.
- Combine tuna, parsley, Vegenaise, red onion and olives. Stir with a fork to break up the tuna, then add beans and gently combine.
- Toss arugula with olive oil and lemon juice.
- Spread hummus on toasted bread. Top each piece of toast with 3 tablespoons of the tuna mixture and ¼ cup of the arugula mixture. Sprinkle with cracked pepper to serve.
