Mandarin Chia Seed Parfait

Our Minnesota winters can be cold and gray, but one bright spot during those dark months is the arrival of peak citrus. Is there anything more delightful or refreshing than a bright, sunny Mandarin on a gray, bitterly cold day? Here at Lunds & Byerlys, we’re all pretty excited about Peelz Mandarins. As the name suggests, the peel almost falls off the fruit – and they’re so intensely juicy and flavorful.

Peelz are also seedless, which makes them easy to work into recipes, like salads, desserts and more. Here we turned them into an outstanding chia seed parfait that’s creamy and delicious, and also healthy and satisfying. A win-win in our book! ‘

Serves 3

Ingredients

¼ cup chia seeds

1 cup almond milk

2 Tablespoons honey

1 teaspoon vanilla extract

1 cup granola

1 cup Mandarin segments

1 cup Greek yogurt

Honey, for drizzling (optional)

Instructions

  1. In a medium bowl, whisk together chia seeds, almond milk, honey and vanilla extract until just combined. Cover the bowl and place in the refrigerator for a couple of hours or overnights.
  2. When ready to serve, stir the chilled chia seed mixture. Evenly distribute a layer of granola, mandarin segments, chia pudding and Greek yogurt into three separate bowls or glasses. Top with remaining mandarin segments and a drizzle of honey, if desired.
