Easy slow cooker enchilada casserole

Craving Mexican food, but don’t even have time to make tacos? Here’s the answer: Just throw a few ingredients into the slow cooker in the morning and you’ll have a hot and cheesy enchilada casserole ready by dinnertime! Start by stacking your favorite south-of-the-border ingredients:

  • Enchilada sauce
  • Tortillas
  • Black beans
  • Corn
  • Diced tomatoes with chilies

Top with shredded cheese and cook on low for about 8 hours … then dig in! Serve with tortilla chips and fresh chopped lettuce.
