Cinnamon Animal Crackers

Ingredients

  • ¼ cup coconut oil, melted
  • 5 tablespoons unsalted butter, at room temperature
  • ¼ cup granulated sugar
  • 2 tablespoons honey
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoons salt
  • 1 cup all-purpose unbleached flour
  • 1 cup whole wheat flour
  • For the icing:
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons milk
  • Sprinkles (optional)

Directions

  1. In a large bowl with an electric mixer, beat together the coconut oil, butter, sugar and honey until well combined. Add the egg and vanilla, and beat until combined. Add the baking powder, cinnamon and salt, and mix to combine. Add the flours, beating until combined and formed into a dough.

  2. Wrap the dough in plastic and refrigerate for 30 minutes. If you refrigerate for longer than 30 minutes, you’ll want to set it out on the counter for about 10 minutes to warm, as the dough gets a little crumbly if it is too cold.

  3. Heat oven to 350 F.

  4. Line two baking sheets with parchment paper. Roll half of the dough out onto a floured surface, about ¼-inch thick. Using cookie cutters or a pizza cutter, cut the dough into shapes. Repeat with the remaining dough. Note: I used mini cookie cutters that resembled animals.

  5. Place the crackers on the prepared baking sheets. The dough will not spread, so you can place them quite close together, about ½” apart. At this point, you can put crystal sugar sprinkles on the cookies, if desired.

  6. Bake for 8 to 10 minutes. If your animal crackers are not mini, they will take closer to 10 to 12 minutes.

  7. Let cool for 5 minutes on the baking sheets, then transfer to a cooling rack.

  8. You can serve the animal crackers as is, or frost them using the following recipe once they have cooled completely.

  9. To make the icing:
  10. Place the cookies on parchment or wax paper for easier clean up.

  11. In a small bowl, whisk together the powdered sugar, vanilla and milk. Drizzle the icing over each cookie, then decorate with sprinkles. Let the icing set.

  12. Alternately, you can serve these animal crackers plain without sprinkles or icing.

  13. Store in an airtight container for up to a week. Enjoy!
