Cajun Salmon with Mango Salsa
Boring salmon no more! This sweet salsa is bursting with flavor and perfectly complements the spicy Cajun-seasoned salmon.
Ingredients
For the salsa:
- 1 ripe mango, peeled and diced
- ¼ cup diced red bell pepper
- ¼ cup diced red onion
- 2 tablespoons fresh cilantro, minced
- 1 tablespoon fresh lime juice
- 1 teaspoon Lunds & Byerlys Cajun Seasoning
- Salt to taste
For the salmon:
- 4 (6-8 ounce) salmon fillets, skin removed
- 1 tablespoon olive oil
- 2 tablespoons Lunds & Byerlys Cajun Seasoning
- Salt to taste
Directions
- In medium bowl, stir together mango, red bell pepper, onion, cilantro, lime juice, 1 teaspoon Cajun Seasoning and salt. Cover and refrigerate 2 to 4 hours. Bring to room temperature before serving.
- Heat oven to 375 F. Spray a baking sheet with cooking spray or line it with parchment paper.
- Rinse salmon; pat dry with paper towels. Brush both sides of salmon with olive oil. Rub Cajun seasoning and salt onto both sides of salmon.
- Place salmon skin-side down on the baking sheet and bake for 12-15 minutes, until the fish flakes easily with a fork.
- Place salmon fillets on serving platter; spoon mango salsa over fish and serve immediately.
