Twin Cities food blogger greens & chocolate has us ready to hop into spring with this easy-to-make Bunny Cake. It’s a tasty treat that’s a big hit with kids and adults. How could it not be? You can’t look at this cake and frown.

This Bunny Cake is very near and dear to my heart. My Grandma Esther made this cake for us every Easter when I was growing up and, while the tradition fizzled for a while after she passed away, I started making it again each year once I had kids. Not only do my kids love seeing and eating Bunny Cake, they also enjoy helping me decorate it!

This Bunny Cake can be as homemade or semi-homemade as you want. Some years I’ve made the cake and frosting from scratch, and others I’ve used a boxed cake mix and frosting from a can. Honestly? It’s delicious both ways! You can’t beat the ease of a boxed cake mix, so that’s the recipe I’ll be sharing with you today. If you have a favorite white, yellow or lemon cake recipe you’d prefer to use, go for it! I think making it as a carrot cake is an amazing and seasonal idea, too.

No matter what type of cake and frosting you make, this adorable Bunny Cake will be a huge hit with kids and adults!

Ingredients

1 yellow or white box cake mix
2 cans white frosting
Decorating icing in pink, green and black
1 cup sweetened shredded coconut
Jelly beans

Directions

  1. Prepare the cake mix according to the directions for two 9” cake pans. Let cakes cool. 
  2. One of the round cakes will be the face and the other one will be the ears and the bow tie. To cut the ears and bow tie, cut the sides of one cake round on each side to create the ears. What is left over in the middle will be the bow tie. Arrange the cake pieces with the ears above the face and the bow tie under it.
  3. Frost the cake. With the pink decorating icing, fill in the pink part of the ears. Sprinkle the coconut around the pink icing and over the face and bow tie. 
  4. With the green icing, pipe the outline of the bow tie and then fill in with the jelly beans. Use 2 black, blue, or green jelly beans for the eyes. Pipe a pink nose and black mouth. Serve and enjoy!
