Appetizer idea: Melon Salsa

In medium bowl, combine the following:

  • 1 cup diced cantaloupe
  • ¼ cup diced cucumber
  • ¼ cup diced red pepper
  • 2 tablespoons snipped fresh cilantro
  • 1 tablespoon sliced green onion
  • 2 teaspoons snipped fresh mint
  • 2 teaspoons fresh lemon juice
  • ⅛ teaspoon salt
  • Dash of coarse ground black pepper.

Refrigerate, covered, several hours. Serve with your favorite summer wine and plenty of Lunds & Byerlys Tortilla Chips.
