Loaded Baked Potato Rounds
These bite-size appetizers have all the flavor of a loaded baked potato!
- Start by heating your oven to 400 F. While it’s heating up, slice 5-6 red potatoes into thin slices. Lay them flat on a baking sheet and brush with olive oil. Bake for 30 minutes, flipping halfway through.
- Remove them from the oven and top with shredded cheese. Return to oven and bake for another 5 minutes, or until cheese is melted. Top with crumbled baked bacon, sour cream and chives.
