Appetizer idea: Grilled Halloumi and Peaches & Basil

This appetizer is as impressive as it is easy! Here’s what you need:

  • ½ inch slices of Halloumi cheese
  • Fresh peaches, sliced into wedges
  • Fresh basil

Traditionally made from a mixture of goat and sheep milk, Halloumi is known for its strong, salty flavor, chewy texture and high melting point. Once the cheese is cooked, most of the saltiness is removed and it gains a wonderful, creamy texture.

Start by heating your grill to medium heat, then place the slices of cheese on the grill for 6 minutes, flipping once, until soft and charred on both sides.

Next, put the peach slices on the grill for 6 minutes, flipping once, until softened and slightly charred.

Layer the peaches on top of the cheese slices and top with a few leaves of fresh basil. Serve immediately. Delicious paired with a dry rosé.
