Appetizer idea: Blueberry & Grilled Corn Salsa

Try a refreshingly fruity twist on salsa with this delicious Blueberry & Grilled Corn Salsa! Here’s what you need:

  • 2 cobs of corn, grilled
  • 1 pint of blueberries
  • 1 jalapeño, seeded & diced
  • ½ red onion, diced
  • Zest of 1 lime
  • Juice of 1 lime
  • Handful of cilantro, chopped
  • Salt and pepper to taste

Slice the corn off the cobs. Rough chop half of the blueberries. Mix with the whole blueberries and combine with the rest of the ingredients.

Serve with Lunds & Byerlys Tortilla Chips and a New Belgium Skinny Dip.
