Appetizer idea: Avocado Fries with Chipotle Mayo
If you’re into French fries but want something a little healthier, try making avocado fries! The crisp breading outside perfectly complements the creamy avocado inside – and this appetizer is a snap to pull together.
Start by heating your oven to 425 F. While it’s heating up, pit, peel and slice 2 avocados. Then, put ¼ cup of flour in one bowl, 2 lightly beaten eggs in another bowl and ¾ cup Lunds & Byerlys Panko Bread Crumbs
(available in our meat & seafood department) + ¼ tsp salt in a third bowl.
Dredge the avocado slices in the flour, then the eggs, then the panko mixture. Place the breaded slices on a baking sheet sprayed with cooking spray. Bake for 10 minutes, flip and then bake for another 10 minutes. Serve immediately with some chipotle mayo, available in our grocery aisles.
