Any-Way-You-Want-It Sweet Potato Toast

If you love toast, pizza, crackers and sandwiches (hello, join the club) but you’re trying to watch gluten or refined carbs, the L&B Nourish team has a treat for you — sweet potato toast. We cut the sweet potatoes into nice, thick slabs and toast them ‘til they’re soft, lightly caramelized and naturally sweet. They make a surprisingly hearty base for toppings, and you can load them up with all kinds of goodies.

This is one of those no-recipe recipes, which is to say that we’ve outlined the thing in broad strokes, but as the song goes: any way you want it, that’s the way you need it. Here, we’ve given our sweet potato toast the pizza treatment. Think zesty L&B Organic Tomato Basil Pasta Sauce, melty pools of fresh mozzarella and a handful of herbs, including basil, oregano, parsley and sage. We love the contrast of the savory toppings with soft, toasty-sweet potato.

What else can you do with sweet potato toast? We like it topped with mashed avocado, peppery radishes, spicy microgreens and a bright, citrus-y vinaigrette. You can’t go wrong with a dollop of hummus, a couple tomato slices and a pinch of flake salt. Egg and cheese bake is definitely a go!

It’s also fun to play up the potato’s sweet side with some soft, milky ricotta and a drizzle of honey. And our kids are wild for hot sweet potato toast slathered in butter, almond butter and orange marmalade — a premium quality after-school snack!

Cook time: 35 minutes

Ingredients
1 sweet potato, washed, cut into ½-inch thick slices, lengthwise
1 cup L&B Organic Small Batch Tomato Basil Pasta Sauce, warmed
4 ounces fresh mozzarella, sliced or crumbled
¼ cup fresh herbs, chopped

Directions

  1. Place the sweet potato slabs on your toaster oven’s baking sheet, and toast on high until soft. It may take 4 to 6 rounds of toasting. Note: if you don’t have a toaster oven, or you’re making sweet potato toast for the whole family, you can bake the slabs in the oven at 400 F for 25 to 30 minutes, flipping halfway through.
  2. Remove the sweet potatoes from the toaster oven. Spoon the pasta sauce over them, and sprinkle or layer on the fresh mozzarella.
  3. Return the sweet potatoes to the toaster oven (or oven), and bake until the cheese is melty and starting to bubble, about 5 minutes.
  4. Transfer the sweet potatoes to plates, garnish with fresh herbs and serve.
