Hail Avocado Toast

  • 2 whole ripe
    avocados, medium
  • 2 ½
    tablespoons fresh organic lemon juice
  • ¼ teaspoon Lunds
    & Byerlys Sea Salt
  • 8 slices Lunds
    & Byerlys Superseed Bread
  • 1 tablespoon California
    Olive Ranch Olive Oil
  • 4 small heirloom
    tomatoes, sliced into 16 rounds
  • 2 tablespoons chives, chopped
  • ⅓ cup sunflower
  • Salt and pepper,


  1. Heat grill or
    broiler to medium-high.
  2. Remove pit and
    skin from avocados; place avocados in a bowl. Mash with a fork. Add lemon and
    sea salt. Cover with plastic wrap pressed down on top of avocado to prevent
    discoloring. Chill until ready to use.
  3. If using
    broiler, place sliced bread on cookie sheet. Brush olive oil on each side of
    bread and broil or grill until golden; flip to other side and repeat.
  4. Spread
    approximately 2 tablespoons of avocado mixture on each piece of toast. Top with
    2 slices of tomato, approximately 2 tablespoons sunflower sprouts and a pinch
    of the chopped chives. Optional: Sprinkle with pinch of sea salt and pepper.
