Hail Avocado Toast

Ingredients
- 2 whole ripe
avocados, medium - 2 ½
tablespoons fresh organic lemon juice - ¼ teaspoon Lunds
& Byerlys Sea Salt - 8 slices Lunds
& Byerlys Superseed Bread - 1 tablespoon California
Olive Ranch Olive Oil - 4 small heirloom
tomatoes, sliced into 16 rounds - 2 tablespoons chives, chopped
- ⅓ cup sunflower
sprouts - Salt and pepper,
optional
Directions
- Heat grill or
broiler to medium-high. - Remove pit and
skin from avocados; place avocados in a bowl. Mash with a fork. Add lemon and
sea salt. Cover with plastic wrap pressed down on top of avocado to prevent
discoloring. Chill until ready to use. - If using
broiler, place sliced bread on cookie sheet. Brush olive oil on each side of
bread and broil or grill until golden; flip to other side and repeat. - Spread
approximately 2 tablespoons of avocado mixture on each piece of toast. Top with
2 slices of tomato, approximately 2 tablespoons sunflower sprouts and a pinch
of the chopped chives. Optional: Sprinkle with pinch of sea salt and pepper.
