  1. Roast in a preheated 325 F oven. If desired, glaze the last 30 minutes. Hams will be easier to carve if allowed to stand, covered with foil, 10-15 minutes after removing from oven. If ham is to stand, remove from oven when thermometer registers 135 F for hams 3-10 pounds; 130 F for hams 11-16 pounds. Internal temperature will rise 5-10 degrees during standing.

Chef’s tip

Place purchased ham in original wrapping in refrigerator for 7-10 days maximum. Slices should be used within 3-4 days.

Vacuum-packaged hams, unopened, will keep 2 weeks in the refrigerator.

Canned hams should be refrigerated until ready to use.

Leftover cooked ham should be tightly wrapped and refrigerated within 2 hours after cooking. Leftover cooked ham can be stored in refrigerator for 4-5 days.

Freezing deteriorates ham quality. If you must freeze, wrap tightly in moisture/vapor proof packaging. Freeze no longer than 2 months. Thaw in refrigerator before using.
